Vegetarian Meatloaf

Ingredients Directions
  • 1 medium onion, chopped
In a large skillet, melt butter; then sauté onion and bread cubes.  Keep turning cubes over with a spatula.  At first, pan will be very full, but as the cubes begin to curl a little around the edges, it will be easier to do.  Continue to sauté until the bread cubes are smaller.  In a large bowl, combine eggs, sage and garlic powder.  Beat well using a fork.  Add crumblers and cheese, mix well.  Add bread cube/onion mixture on top.  Allow to sit for a minute or two.  The warmth of the bread cubes will make it easier to stir.  Mix well and spray a 9x13 pan with nonstick spray.  Put meatloaf mixture into pan and spread evenly.  Bake for 20 minutes at 350.  While it is baking, combine ½ cup ketchup, ½ cup packed brown sugar and ½ cup water.  Whisk until well combined.  After meatloaf has baked for 20 minutes, take out of oven and add the above glaze.  Spread evenly and return pan to oven for another 20-25 minutes.  Allow to cool slightly and cut into pieces.  Very yummy and may even fool people into thinking it actually has meat in it.  It is very popular at potluck. 
  • 12 slices bread, cubed.  Whole Wheat, multigrain or buttertop work best
  • 1 stick butter or margarine
  • 1 package Morning Star Farms Crumblers
  • 2 cups finely grated Cheddar Cheese
  • 4 eggs
  • 1 tsp. garlic powder
  • 1 tsp. sage

Pumpkin Muffins and Beard

Preheat oven to 350 degrees
 
Line muffin pan with cupcake liners or if not using liners, grease muffin pan.  Another option is to use two loaf pans.
 
Mix the following ingredients together . . .
  • 3 eggs (or 3 tablespoons of ground flax seed and 9 tablespoons of water for vegan option)
  • 2 cups of sugar
  • 1 teaspoon of vanilla
  • 1 cup of vegetable oil
 
Add the following ingredients . . .
  • 1 15oz can of pure pumpkin
  • 3 cups of flour
  • 2 teaspoons of baking soda
  • ¼ teaspoon of baking powder
  • 2 teaspoons of cinnamon
  • 1 teaspoon of nutmeg
  • 1 teaspoon of salt
 
If desired, top with thinly sliced almonds before baking.
 
If making muffins . . .
Spoon into greased (or lined) muffin pan and bake at 350 degrees for 30 minutes.
 
If making loaves . . .
Pour into greased loaf pans (recipe makes two) and bake at 350 degrees for 60 minutes.
